Filling Preparation

Cook the Beef
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and translucent, about 3-4 minutes.

Add Ground Beef
Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Add Vegetables and Seasoning
Stir in the diced carrots, frozen peas, and corn. Add the beef broth, Worcestershire sauce, salt, black pepper, and thyme. Bring to a simmer and cook for about 10 minutes, until the vegetables are tender.

Cool the Filling
Remove from heat and allow the filling to cool slightly while preparing the mashed potatoes.

Assemble the Pie

Prepare Puff Pastry
Preheat the oven to 200°C (400°F). Roll out the puff pastry sheets to fit a pie dish.

Cover and Top with Cheese
Cover with the remaining puff pastry, sealing the edges. Sprinkle the shredded Gruyere cheese on top.

Bake the Pie
Cut a few slits in the top to allow steam to escape. Bake in the preheated oven for 25-30 minutes, or until golden brown.
