Prepare Egg Roll Filling

    Cook Vegetables

    In a skillet over medium heat, sauté the shredded cabbage and grated carrots until tender, about 5-7 minutes.

    Combine Filling Ingredients

    In a large bowl, combine the cooked cabbage and carrots with the corned beef and shredded Swiss cheese. Season with salt and black pepper. Mix until well combined.

Assemble Egg Rolls

    Prepare Egg Roll Wrappers

    Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place 2-3 tablespoons of the filling mixture in the center.

    Roll and Seal

    Fold the corner over the filling, then fold in the sides and roll tightly. Brush the top corner with beaten egg to seal. Repeat with remaining wrappers and filling.

Fry Egg Rolls

    Heat Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Egg Rolls

    Carefully place the egg rolls in the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Make Spicy Thousand Island Sauce

    Combine Sauce Ingredients

    In a small bowl, mix together the mayonnaise, ketchup, hot sauce, and pickle relish until well combined. Adjust seasoning to taste.
