Method

For the Potato Balls

  1. 1

    Prepare the Potatoes

Peel and chop the potatoes into small chunks. Boil them in salted water for about 15-20 minutes or until fork-tender. Drain and let them cool slightly.

  2. 2

    Mix Ingredients

In a large mixing bowl, mash the boiled potatoes until smooth. Cook the bacon until crispy, then crumble it. Add the crumbled bacon, roasted corn, shredded cheddar cheese, all-purpose flour, eggs, salt, and black pepper to the mashed potatoes. Mix until combined.

  3. 3

    Form the Balls

Take a small amount of the potato mixture and roll it into a ball about the size of a golf ball. Repeat until all the mixture is used up.

  4. 4

    Fry the Balls

In a large pot or deep fryer, heat the vegetable oil over medium-high heat. Once hot, carefully drop in the potato balls in batches. Fry until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.

For the Bacon-Ranch Sauce

  1. 5

    Prepare the Sauce

In a small bowl, combine ranch dressing with crumbled bacon. Mix well until combined. Adjust seasoning if necessary.
