Prepare the Pickles
Drain the pickle chips thoroughly on paper towels to remove excess moisture. Pat them dry to ensure a crispy texture after frying.

Set up a Breading Station
In three separate shallow bowls, place the flour in the first bowl, the buttermilk and beaten eggs in the second bowl, and the panko breadcrumbs mixed with cornstarch, salt, black pepper, garlic powder, and cayenne pepper in the third bowl.

Bread the Pickles
Dip each pickle chip into the flour, shaking off the excess. Next, dip it into the buttermilk-egg mixture, ensuring it is well-coated, then finally coat it in the panko breadcrumb mixture, pressing gently to adhere.

Fry the Pickles
Carefully add the breaded pickle chips to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes per side or until golden brown and crispy.

Drain and Serve
Use a slotted spoon to remove the fried pickles from the oil and place them on a paper towel-lined plate to drain excess oil. Keep warm while you finish frying the remaining batches.
Sriracha Aioli

Mix the Aioli
In a small bowl, combine the mayonnaise, sriracha, lemon juice, and minced garlic. Stir until well combined.

Season to Taste
Add salt to the aioli mixture to taste, adjusting as necessary for your preference.

Serve
Transfer the sriracha aioli to a serving dish and serve it alongside the fried pickles for dipping.
