Fried Haddock

    Prepare the Breading

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt until well combined.

    Make the Batter

    Gradually add the beer to the flour mixture, whisking until a smooth batter forms.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Haddock

    Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the fillets in the hot oil, frying in batches until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Old Bay Aioli

    Combine Ingredients

    In a small bowl, mix together the mayonnaise, minced garlic, Old Bay seasoning, and lemon juice until smooth and well combined.

    Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.

Sandwich Assembly

    Prepare the Buns

    Lightly toast the brioche buns until golden brown.

    Assemble the Sandwich

    Spread a generous amount of Old Bay aioli on the bottom half of each bun. Place a crispy haddock fillet on top, followed by a handful of shredded iceberg lettuce. Top with the other half of the bun.

    Serve the fried haddock sandwiches with fries and coleslaw on the side.
