Preparation of Ingredients

Prepare the Corned Beef
Slice the house-made corned beef into thin slices, ensuring they are uniform for even heating.

Prepare the Sauerkraut
Drain the sauerkraut thoroughly to remove excess liquid. You may want to rinse it under cold water and squeeze out any remaining moisture.
Assemble the Sandwich

Layer the Ingredients
On two slices of rye bread, spread a generous amount of Thousand Island dressing. Layer with sliced corned beef, followed by sauerkraut, and top with Swiss cheese.

Close the Sandwich
Place the remaining slices of rye bread on top of the assembled layers.
Grilling the Sandwich

Heat the Pan
In a skillet over medium heat, melt 1 tablespoon of butter.

Flip and Continue Grilling
Spread the remaining tablespoon of butter on the top slice of bread, then flip the sandwich and grill the other side for another 3-4 minutes, until the cheese is melted and the bread is crispy.
Serving

Remove the sandwiches from the skillet, slice them in half diagonally, and serve warm with additional Thousand Island dressing on the side if desired.
