    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare Mushrooms

    Clean the large mushrooms with a damp cloth and carefully remove the stems. Set the caps aside and chop the stems finely.

Stuffing the Mushrooms

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo sausage until browned and fully cooked, about 5-7 minutes. Break it apart with a spoon as it cooks.

    Mix the Filling

    In a mixing bowl, combine the cooked chorizo, chopped mushroom stems, crushed Ritz crackers, cream cheese, garlic powder, onion powder, and chopped parsley. Mix until well combined.

    Stuff the Mushroom Caps

    Using a spoon, fill each mushroom cap generously with the chorizo mixture, pressing it in lightly to ensure it holds.

Baking

    Top with Cheese

    Place the stuffed mushrooms on a baking sheet. Top each stuffed mushroom with shredded pepper jack cheese.

    Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
