Preparation of Haddock

    Preheat the Broiler

    Preheat your oven's broiler to high, allowing it to reach the desired temperature for broiling the haddock.

    Season the Haddock

    Pat the haddock fillets dry with paper towels. Season both sides with salt and black pepper to taste.

Preparation of Topping

    Prepare Cracker Crumbs

    In a food processor, pulse the Ritz crackers until they are finely crushed, then set aside.

    Mix Topping Ingredients

    In a bowl, melt the unsalted butter. Once melted, add the crushed Ritz crackers, Parmesan cheese, lemon juice, garlic powder, and white wine. Mix until well combined.

Broiling

    Arrange Haddock

    Place the seasoned haddock fillets on a broiler-safe baking dish or sheet.

    Top with Mixture

    Evenly distribute the cracker mixture over the top of each haddock fillet, pressing down lightly to adhere.

    Broil the Haddock

    Place the baking dish under the broiler. Broil for 8-10 minutes, or until the topping is golden brown and the fish flakes easily with a fork.

    Prepare the Vegetables

    While the haddock is broiling, bring a pot of salted water to a boil. Add the asparagus or green beans and blanch for 3-4 minutes until bright green and tender-crisp.

    Drain the vegetables and immediately plunge them into ice water to stop the cooking process. Once cooled, drain again and season with salt and pepper to taste.
