Marinate the Chicken
In a bowl, coat the chicken breasts with olive oil, blackening seasoning, salt, and black pepper. Ensure the chicken is evenly coated. Let it marinate for at least 30 minutes, or refrigerate for up to 2 hours for better flavor.

Sauté the Spinach
In a skillet over medium heat, add a splash of olive oil. Once hot, add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.

Grill Chicken
Heat a grill pan or outdoor grill over medium-high heat. Add the marinated chicken breasts and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once cooked, let the chicken rest for a few minutes before slicing.

Layer Ingredients
On one slice of ciabatta or focaccia bread, layer sliced blackened chicken, sautéed spinach, roasted red peppers, and a generous amount of gorgonzola cheese. Top with another slice of bread.

Grill the Panini
Spread butter on the outer sides of each sandwich. Place the sandwiches on a preheated panini press or grill pan. Grill for about 3-4 minutes, or until the bread is golden brown and the cheese is melted. If using a grill pan, press down with a heavy skillet to achieve a nice grill mark.
