Preparation of Scallops

    Wrap the Scallops

    Preheat your oven to 400°F (200°C). Take each jumbo scallop and wrap it with a slice of bacon, securing it with a toothpick if necessary. Place the wrapped scallops on a baking sheet lined with parchment paper.

    Bake the Scallops

    Bake the scallops in the preheated oven for about 15-20 minutes, or until the bacon is crispy and the scallops are opaque and cooked through.

Preparation of Wilted Spinach

    Sauté the Shallots

    In a large skillet, heat the olive oil over medium heat. Add the sliced shallots and sauté until they are caramelized and golden brown, about 5-7 minutes.

    Once the shallots are caramelized, add the fresh spinach to the skillet. Stir well, cooking until the spinach wilts down, which should take about 2-3 minutes.
