Prepare the Mayo
In a bowl, combine the mayonnaise, truffle oil, garlic powder, salt, and black pepper. Mix well until smooth and set aside.

Make the Jam
Chop the cooked bacon and return to the skillet. Stir in brown sugar, apple cider vinegar, and black pepper. Cook on low heat, stirring occasionally, for about 10-15 minutes until thickened. Let cool slightly.

Form the Patties
In a bowl, mix the ground beef with salt and black pepper. Divide into two equal portions and shape into patties.

Add Cheese
During the last minute of cooking, place a slice of cheddar on each patty and cover to melt.

Toast the Buns
While the patties are cooking, toast the burger buns on the grill or in a toaster until golden brown.

Assemble the Burger
On the bottom half of each bun, spread a generous amount of the bacon truffle mayo. Place the cooked patty with melted cheddar on top, followed by a layer of bacon jam, additional crispy bacon slices, leafy greens, and tomato slices. Top with the other half of the bun.

Cook the additional 6 slices of bacon until crispy in a skillet, and set aside for topping the burgers.
