Method

Pork Chop

  1. 1

    Prepare the Pork Chop

Season the pork chop with salt and black pepper on both sides.

  2. 2

    Grill the Pork Chop

Heat olive oil in a grill pan over medium-high heat. Add the seasoned pork chop and grill for about 5-7 minutes per side, or until it reaches an internal temperature of 145°F (63°C). Remove from heat and let it rest.

Cream Sauce

  1. 3

    Cook the Bacon

In the same pan used for the pork chop, add the bacon slices and cook over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pan.

  2. 4

    Caramelize the Onion

Add the chopped onion to the pan and cook in the bacon drippings, stirring occasionally, until the onion is soft and caramelized, about 8-10 minutes.

  3. 5

    Make the Sauce

Pour in the apple cider and bring to a simmer, scraping up any browned bits from the bottom of the pan. Cook for about 5 minutes or until reduced by half.

  4. 6

    Add Cream and Season

Stir in the heavy cream and thyme. Cook for an additional 3-4 minutes until the sauce thickens slightly. Crumble in the cooked bacon and season with salt and black pepper to taste.

Mashed Potatoes

  1. 7

    Prepare the Potatoes

Peel and cut the potatoes into quarters. Place them in a pot of salted water and bring to a boil.

  2. 8

    Cook the Potatoes

Boil the potatoes for 15-20 minutes, or until fork-tender. Drain and return to the pot.

  3. 9

    Mash the Potatoes

Add butter, milk, and salt to the drained potatoes. Mash until smooth and creamy.

Assemble the Dish

  1. 10

    Plate the Dish

Spoon a generous portion of mashed potatoes onto each plate. Top with the grilled pork chop and drizzle the apple bacon cream sauce over the top.
