Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, bell peppers, and mushrooms. Sauté until they are soft and caramelized, about 5-7 minutes. Remove from the skillet and set aside.

Cook the Steak
In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to high and add the sliced ribeye steak. Cook for about 3-4 minutes, stirring frequently until just cooked through.

Combine and Melt the Cheese
Return the sautéed vegetables to the skillet with the steak. Mix well and place the provolone cheese slices on top. Cover the skillet for 2-3 minutes until the cheese is melted.

Assemble the Sandwiches
Cut the hoagie rolls open and fill them generously with the steak and cheese mixture. Serve immediately.
