    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess water.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, frying for about 4-5 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle them with Old Bay seasoning, salt, black pepper, paprika, and garlic powder. Toss to coat evenly.

    Garnish and Serve

    Garnish the fries with chopped parsley and serve immediately while hot.
