    Prepare the Chicken

    In a bowl, mix olive oil, sumac, salt, and black pepper. Rub this mixture all over the chicken halves, ensuring they are well coated. Let marinate for at least 30 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Place the marinated chicken halves skin side down on the grill. Cook for about 25-30 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C) and the skin is crispy.

    Braise the Shallots

    While the chicken is grilling, heat a skillet over medium heat. Add a bit of olive oil, then add the sliced shallots. Cook until they are soft and slightly caramelized, about 10 minutes.

    Make the Chili Jus

    In the same skillet, add the chopped preserved lemon, sliced red chili, and chicken stock. Simmer for 5-7 minutes to allow the flavors to meld. Adjust seasoning with salt and pepper if necessary.

    Once the chicken is done grilling, let it rest for 5 minutes. Serve the chicken halves with the braised shallots and drizzle the chili jus over the top. Garnish with fresh parsley.
