    Prepare the Dough

    In a large mixing bowl, combine the bread flour, whole wheat flour, and salt. In a separate bowl, mix the sourdough starter with warm water until well combined. Gradually add the wet mixture to the dry ingredients and mix until a shaggy dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Form the dough into a ball.

    First Rise

    Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise at room temperature for 4 to 6 hours or until doubled in size.

    Shape the Dough

    Once risen, gently deflate the dough and turn it out onto a floured surface. Shape it into a round loaf by folding the edges towards the center.

    Second Rise

    Place the shaped loaf seam side down in a floured proofing basket. Cover and let it rise for another 2 to 3 hours.

    Preheat the Oven

    About 30 minutes before baking, preheat your oven to 450°F (232°C) and place a Dutch oven inside to heat up.

    Bake the Bread

    Carefully transfer the loaf into the preheated Dutch oven. Cover with a lid and bake for 30 minutes. Remove the lid and bake for an additional 15 minutes until golden brown.

    Cool and Serve

    Remove the bread from the oven and let it cool on a wire rack for at least 1 hour before slicing. Serve with cultured butter.
