Prepare the Fish

Preheat your grill to medium-high heat. Clean the branzino, and make diagonal slits on each side of the fish. Rub the fish with olive oil, salt, and black pepper both inside and out.

Grill the Fish

Place the branzino on the grill and cook for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily with a fork. Remove from the grill and let it rest.

Make the Salad

While the fish is grilling, prepare the salad. Halve the muscadine grapes and chop the celery into small pieces. In a bowl, mix the grapes, celery, lemon juice, and chopped parsley.

Serve

On a plate, serve a generous scoop of ajo blanco as a base. Place the grilled branzino on top and add the muscadine grape and celery salad on the side.
