Prepare the Batter
In a large mixing bowl, whisk together the flour, baking powder, and salt. In a separate bowl, cream the cultured butter until light and fluffy. Beat in the eggs one at a time, then mix in the milk. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Cook the Cakes
Heat a non-stick skillet over medium heat and lightly grease with butter. Pour 1/4 cup of batter onto the skillet for each cake. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side. Repeat with the remaining batter.

Serve
Plate the Nancy cakes and top each with a generous spoonful of smoked trout roe. Finely chop the chives and sprinkle over the cakes. Serve immediately.
