Method

Prepare Tomatillo Sauce

    Make the Sauce

    In a blender, combine tomatillos, jalapeño, cilantro, lime juice, and salt. Blend until smooth and set aside.

Cook Corn and Poblano Rice

    Sauté Vegetables

    In a medium saucepan, heat a tablespoon of olive oil over medium heat. Add diced onion and poblano pepper, sauté until softened, about 5 minutes.

    Cook the Rice

    Add minced garlic, rice, corn, and vegetable broth to the saucepan. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes or until rice is tender.

    Finish the Rice

    Remove from heat, stir in lime juice and cilantro. Fluff with a fork and set aside.

Cook Salmon

    Sear Salmon

    Season salmon fillets with salt and black pepper. In a skillet, heat remaining olive oil over medium-high heat. Add salmon skin-side down and sear for 4-5 minutes until skin is crispy. Flip and cook for another 3-4 minutes until cooked through.

Assemble and Serve

    Plate the Dish

    On a plate, serve a portion of corn and poblano rice, top with seared salmon, slices of avocado, and drizzle with tomatillo sauce.
