Prepare the Brussel Sprouts
Trim the ends of the brussel sprouts and remove any yellow or damaged leaves. Cut each sprout in half.

Prepare the Chilis
Slice the Fresno chilis in half lengthwise and remove the seeds if you prefer less heat.

Heat the Beef Fat
In a large skillet, heat the beef fat over medium-high heat until melted and hot.

Fry the Brussel Sprouts
Add the brussel sprouts to the skillet, cut side down. Fry for about 5-7 minutes or until they are golden brown.

Add the Chilis
Add the sliced Fresno chilis to the skillet and continue frying for another 2-3 minutes until they are slightly softened.

Add Apple Balsamic
Drizzle the apple balsamic vinegar over the brussel sprouts and chilis, and toss to coat evenly. Cook for an additional 1-2 minutes.

Season and Serve
Season with salt and pepper to taste. Serve hot as a side dish.
