Pasta and Sauce
Method
Preparation
- 1
Cook the Bucatini
Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente, usually about 9-11 minutes.
- 2
Prepare the Walnut Pesto
In a food processor, combine basil leaves, walnuts, garlic, olive oil, Parmesan cheese, salt, and pepper. Blend until smooth, adding more olive oil if needed to achieve desired consistency.
- 3
Prepare the Tomatoes
While the pasta is cooking, halve the Sungold tomatoes and set aside.
- 4
Combine and Serve
Drain the pasta and reserve a cup of the cooking water. Toss the hot pasta with the walnut pesto, adding reserved water as necessary to loosen the sauce. Plate the pasta, top with halved tomatoes, and tear over burrata cheese. Drizzle with additional olive oil if desired.
