Preparation and Cooking

    Prepare the Potatoes

    Peel the Russet potatoes and cut them into thick strips, about 1/4 inch wide. Rinse the cut potatoes in cold water to remove excess starch, then pat them dry with paper towels.

    Heat the Beef Fat

    In a large heavy-bottomed pot or deep fryer, heat the beef fat (tallow) to 350°F (175°C). Use a thermometer to ensure the oil reaches the right temperature.

    Fry the Potatoes

    Carefully add the dried potato strips to the hot beef fat in batches, ensuring not to overcrowd the pot. Fry them for about 5-7 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Season and Serve

    While the fries are still hot, sprinkle with salt to taste. Serve immediately alongside Bearnaise sauce for dipping.
