Prepare the Vegetable Patties

    Mash Chickpeas

    In a large bowl, mash the canned chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Combine Vegetables

    Add the grated carrot, grated zucchini, diced red bell pepper, chopped onion, and minced garlic to the mashed chickpeas. Mix well until all the vegetables are evenly distributed.

    Add Seasonings

    Stir in the breadcrumbs, beaten egg, cumin powder, salt, and black pepper. Mix until fully combined. The mixture should be sticky but hold together. If too wet, add more breadcrumbs.

    Divide the mixture into 4 equal portions and shape each portion into a patty, about 1/2 inch thick.
