    Wash and Peel Potatoes

    Wash the potatoes thoroughly to remove any dirt. Peel the skin off using a vegetable peeler.

    Slice Potatoes

    Using a sharp knife or a mandoline slicer, cut the potatoes into thin slices (about 1/8 inch thick).

    Soak Potato Slices

    Place the sliced potatoes in a bowl of cold water for about 30 minutes. This helps to remove excess starch and makes them crispier.

Cooking

    Heat Oil

    In a large, deep skillet or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the heat by dropping a small piece of potato into the oil; it should sizzle immediately.

    Dry Potato Slices

    After soaking, drain the potato slices and pat them dry with a clean kitchen towel to remove excess moisture.

    Fry the Potato Slices

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove them from the oil.

    Place the fried chips on a plate lined with paper towels to absorb excess oil. While they are still hot, sprinkle with salt and optional seasonings like paprika, garlic powder, and chili powder if desired.
