    Prepare the Potatoes

    Peel the potatoes and cut them into thin slices, about 1/4 inch thick.

    Cook the Potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced potatoes and season with salt. Cook until golden brown and tender, about 10-15 minutes, stirring occasionally.

    Prepare the Chorizo

    While the potatoes are cooking, slice the chorizo into thin rounds. Once the potatoes are done, remove them from the skillet and set aside.

    Cook the Chorizo

    In the same skillet, add the remaining 2 tablespoons of olive oil and the sliced chorizo. Cook over medium heat until the chorizo is browned and crispy, about 5-7 minutes.

Cooking the Eggs

    Fry the Eggs

    Once the chorizo is cooked, crack the eggs into the skillet (you may need to do this in batches if your skillet is small). Cook the eggs sunny-side up until the whites are set but the yolks are still runny, about 3-4 minutes.

    Once the eggs are cooked, gently place the fried potatoes back into the skillet, along with the chorizo. Carefully mix to combine, ensuring the eggs remain intact.

Serving

    Sprinkle fresh parsley and paprika over the top of the dish. Serve immediately, allowing diners to break the yolks over the potatoes and chorizo.
