Prepare Sushi Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the water is absorbed. Remove from heat and let sit for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture with a wooden spatula. Allow to cool to room temperature.

Assemble Sushi

    Lay a nori sheet shiny side down on a bamboo sushi mat or a clean cutting board.

    With wet hands, take a handful of sushi rice and evenly spread it over the nori, leaving a 1-inch border at the top.

    Layer the salmon, cucumber, avocado, and a thin layer of cream cheese horizontally across the center of the rice.

    Using the bamboo mat, carefully roll the nori away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.
