Method
Preparation
- 1
Marinate the Chicken
In a mixing bowl, combine the chicken breasts with soy sauce, minced garlic, and grated ginger. Let it marinate for at least 30 minutes.
- 2
Prepare the Vegetables
Chop the bell peppers into bite-sized pieces and break the broccoli into small florets. Set aside.
- 3
Cook the Rice
Rinse the rice under cold water until the water runs clear. In a pot, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then cover and simmer for 15-20 minutes, or until the rice is cooked.
Cooking
- 4
Stir-Fry the Chicken
In a large skillet or wok, heat the vegetable oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and stir-fry until browned and cooked through, about 5-7 minutes.
- 5
Add Vegetables
Add the bell peppers and broccoli to the skillet with the chicken. Stir-fry for an additional 5 minutes until the vegetables are tender-crisp.
- 6
Add Marinade
Pour the reserved marinade over the chicken and vegetables. Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
Serving
- 7
Plate and Garnish
Serve the stir-fried chicken and vegetables over a bed of rice. Garnish with black pepper, sesame seeds, and chopped green onions.
