Thoroughly rinse the mixed organic greens, baby spinach, and arugula under cold running water. Pat dry with a clean kitchen towel or use a salad spinner to remove excess water.

Dice the cucumber into small cubes and halve the cherry tomatoes. Set aside.

In a large salad bowl, combine the washed mixed greens, baby spinach, arugula, diced cucumber, and cherry tomatoes. Toss gently to mix.

In a small bowl, whisk together the olive oil, fresh orange juice, lemon juice, honey, salt, and black pepper until well combined.
