    Prepare the Vegetables

    Slice the green bell pepper, onion, and mushrooms into thin strips. Set aside.

    Cook the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced green bell pepper, onion, and mushrooms. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are softened and slightly caramelized. Remove from skillet and set aside.

    Cook the Steak

    In the same skillet, add the shaved ribeye steak. Cook over medium-high heat, stirring frequently, until the steak is browned and cooked through, about 3-5 minutes. Season with additional salt and pepper to taste.

    Return the sautéed vegetables to the skillet with the cooked steak. Mix well to combine the flavors.

    Melt the Cheese

    Lay the slices of provolone cheese over the steak and vegetable mixture in the skillet. Cover the skillet with a lid and let it cook for 2-3 minutes until the cheese is melted.

    Slice the sub rolls or hoagie rolls lengthwise without cutting all the way through. Spoon the steak and vegetable mixture into each roll, ensuring an even distribution of the melted cheese. Serve immediately.
