Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Lay the Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread the Rice
Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight.

Slice the Roll
Once rolled, use a sharp knife to slice the sushi roll into 6-8 pieces, wiping the knife with a damp cloth between cuts.

In a small bowl, combine soy sauce, wasabi, and pickled ginger. Mix well and serve alongside the sushi.
