Prepare the Ingredients
Chop the lamb shoulder into large chunks, about 2 inches in size. Peel and cube the potatoes, slice the carrots, and chop the onions. Mince the garlic cloves.

Season the Lamb
In a large bowl, season the lamb chunks with salt, black pepper, and some of the fresh thyme and rosemary. Let it marinate for at least 30 minutes.

Simmer the Stew
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.

Once the stew is cooked, remove the bay leaves. Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley if desired.
