Preparation

1. Prepare the Ingredients

Chop the onion, slit the green chili, and cube the paneer. Mince the garlic and ginger, and puree the tomato.

2. Soften the Spinach

In a pot, bring a cup of water to a boil. Add the chopped spinach and blanch for 2-3 minutes. Drain and set aside.

Cooking

3. Sauté the Aromatics

Heat the oil in a large pan over medium heat. Add cumin seeds and let them crackle. Add chopped onions and sauté until golden brown.

4. Add Garlic and Ginger

Stir in minced garlic and ginger, and cook for another 1-2 minutes until fragrant.

5. Incorporate Spices

Add coriander powder, turmeric powder, garam masala, and red chili powder. Stir well and cook for 1 minute.

6. Add Tomato Puree

Pour in the pureed tomato and cook on medium heat until the oil separates from the mixture (about 5-7 minutes).

7. Combine Chickpeas and Paneer

Add chickpeas and paneer cubes to the pan, mixing well to coat them in the spice mixture.

8. Cook the Dish

Add the blanched spinach and slit green chili. Pour in water, season with salt, and bring to a simmer. Cover and cook for 10 minutes.

9. Final Touch

Stir well, adjust seasoning if necessary, and remove from heat.
