Caramelizing the Onions

    Prepare the Onions

    Slice the large onion into thin strips.

    Heat the Oil

    In a skillet, heat 1 tablespoon of olive oil over medium heat.

    Cook the Onions

    Add the sliced onions to the skillet. Sprinkle with 1 teaspoon of salt and 1 teaspoon of sugar. Cook, stirring occasionally, for about 15-20 minutes or until the onions are golden brown and caramelized.

Assembling the Hot Pastrami

    Prepare the Bread

    Slice the ciabatta bread pieces in half horizontally.

    Spread Mustard

    Spread 1 tablespoon of spicy mustard on the cut sides of each ciabatta half.

    Layer Pastrami and Cheese

    On the bottom half of each ciabatta, layer 4 ounces of pastrami followed by 2 ounces of Swiss cheese.

    Add Caramelized Onions

    Top the pastrami and cheese with the caramelized onions you prepared earlier.

    Close and Toast

    Place the top half of the ciabatta on each sandwich and press down gently. Optionally, toast the sandwiches in a pan or panini press for about 3-5 minutes until the cheese is melted and the bread is crispy.
