Preparing the Filet Mignon

    Sear the Steaks

    Heat 2 tablespoons of olive oil in a heavy skillet over medium-high heat. Season the filet mignon with salt and black pepper on both sides. Once the oil is shimmering, add the steaks to the skillet.

    Add Aromatics

    Add the garlic cloves (smashed) and fresh rosemary to the skillet. Sear the steaks for about 4-5 minutes on each side for medium-rare, basting with the melted butter and oil mixture in the pan.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest on a plate for 5-10 minutes before serving.

Cooking the Vegetable Medley

    Prepare the Vegetables

    Wash and trim the asparagus, peel and slice the carrots, and dice the red bell pepper.

    Sauté the Vegetables

    In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus, carrots, and bell pepper. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

Making the Sauce

    Deglaze the Pan

    In the same skillet used for the filet mignon, add 1 cup of red wine and scrape up any browned bits from the bottom of the pan. Bring to a simmer.

    Add 1 cup of beef broth and the fresh thyme. Let the sauce simmer and reduce for about 10 minutes. Season with salt and black pepper to taste.

    Whisk in 1 tablespoon of butter for richness before serving.
