Method

Cooking the Rice

    Rinse and Cook Rice

    Rinse 2 cups of rice under cold water until the water runs clear. Combine the rinsed rice, 4 cups of water, and 1 tsp of salt in a pot. Bring to a boil over medium-high heat.

    Simmer Rice

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for 18-20 minutes or until the rice is tender and water is absorbed. Turn off the heat and let it sit, covered, for 5 minutes.

Preparing the Vegetable Mix

    Chop Vegetables

    While the rice is cooking, chop 1 medium bell pepper, 1 medium carrot, and 1 medium onion into small pieces. Set aside.

    Heat Oil and Sauté

    In a large skillet, heat 1 tbs of sesame oil over medium heat. Add the chopped onions and sauté for about 2-3 minutes until translucent.

    Add Vegetables

    Add the chopped bell pepper, carrot, and 1 cup of peas to the skillet. Stir-fry for an additional 5-7 minutes until the vegetables are tender.

Combining Ingredients

    Mix in Rice and Seasonings

    Once the vegetables are cooked, add the cooked rice to the skillet. Pour in 3 tbs of soy sauce and season with pepper to taste. Stir until well combined and heated through.

Garnishing

    Serve and Garnish

    Transfer the rice mixture to a serving platter. Garnish with chopped green onions and a sprinkle of sesame seeds before serving.
