Method

Preparation

  1. 1

    Marinate the Meat

In a large bowl, combine the BBQ sauce, soy sauce, olive oil, garlic powder, onion powder, smoked paprika, black pepper, salt, and honey. Mix until well combined. Add the chicken thighs, pork ribs, and beef brisket to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.

  2. 2

    Prepare the Vegetables

Shuck the corn on the cob and remove the silk. Cut the bell peppers into quarters and slice the red onion into thick rings. Set aside as you prepare the grill.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn until they are covered with white ash.

  2. 4

    Grill the Meat

Place the marinated chicken thighs, pork ribs, and beef brisket on the grill. Cook for about 6-8 minutes per side, or until the chicken reaches an internal temperature of 75°C (165°F) and the ribs and brisket are tender and cooked through. Baste with extra BBQ sauce during the last few minutes of grilling.

  3. 5

    Grill the Vegetables

While the meat is grilling, place the corn, bell peppers, and red onion on the grill. Grill the corn for about 10-15 minutes, turning occasionally until charred. Grill the bell peppers and onion for about 5-7 minutes until tender and slightly charred.

Serving

  1. 6

    Serve

Once everything is cooked, remove from the grill and let the meat rest for 5 minutes. Serve the grilled meat alongside the grilled vegetables. Drizzle any remaining BBQ sauce over the top if desired.
