Cooking Instructions

  1. 1

    Prepare the Quinoa

Rinse the quinoa under cold water. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork and set aside.

  2. 2

    Grill the Salmon

Preheat the grill to medium-high heat. Season the salmon fillets with sea salt and black pepper. Place the salmon on the grill skin-side down and cook for about 5-6 minutes. Flip and grill for an additional 4-5 minutes or until the salmon flakes easily with a fork.

  3. 3

    Prepare the Sides

Steam the asparagus for about 4-5 minutes until tender-crisp. For the roasted cherry tomatoes, toss them in olive oil, salt, and pepper, then roast in a preheated oven at 400°F (200°C) for about 15 minutes.

  4. 4

    Assemble the Plate

On a plate, create a base with quinoa, add the grilled salmon on top, and arrange the steamed asparagus and roasted cherry tomatoes on the side. Drizzle with lemon vinaigrette before serving.
