Prepare the Beets
Wash the red beets thoroughly and trim off the tops and roots. Place them in a pot of boiling water and cook for about 30-40 minutes or until tender. Allow them to cool, then peel and dice into bite-sized pieces.

Make the Vinaigrette
In a bowl, mix together the citrus vinaigrette and orange preserve until well combined.

Chop the Vegetables
Finely chop the fresh parsley, scallions, and red onion.

Combine the Salad
In a large mixing bowl, combine the diced beets, chopped parsley, scallions, and red onion. Drizzle the vinaigrette over the salad and toss gently to combine.

Serve
Transfer the salad to a serving platter, crumble the goat cheese on top, and sprinkle with kosher salt. Chill in the refrigerator for at least 15 minutes before serving.
