    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, mix the rice with rice vinegar, sugar, and salt while it's still warm. Let it cool to room temperature.

    Prepare the Surf Clam

    If using fresh Hokkigai, clean and slice it thinly. If using pre-sliced clams, ensure they are thawed and ready for use.

    Assemble the Dish

    On a bamboo mat or a flat surface, lay down a sheet of nori. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Arrange the sliced surf clam on top of the rice.

    Roll the Sushi

    Using the bamboo mat, roll the nori tightly from the bottom up, pressing gently to form a compact roll. Seal the edge of the nori with a little water.

    Slice and Serve

    Using a sharp knife, slice the roll into bite-sized pieces. Serve with soy sauce and a small dab of wasabi on the side. Sprinkle sesame seeds over the top for garnish.
