Prepare the Mussels
Preheat your oven to 375°F (190°C). Clean the mussels thoroughly under cold water, scrubbing the shells to remove any debris. Discard any mussels that do not close when tapped.

Make the Sauce
In a mixing bowl, combine the mayonnaise, masago, and Nakato hot sauce. Stir until well combined.

Assemble the Mussels
Place the cleaned mussels on a baking sheet, open side up. Spoon the masago and mayonnaise mixture generously onto each mussel.

Bake
Sprinkle sesame seeds over the mussels and place them in the preheated oven. Bake for about 12-15 minutes or until the sauce is bubbly and the mussels are cooked through.

Garnish and Serve
Remove the mussels from the oven and let them cool slightly. Garnish with chopped green onions before serving.
