Instructions for preparing Salmon Skin Roll

Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, then let it cool slightly. Mix the rice vinegar, sugar, and salt in a small bowl until dissolved, then fold this mixture into the cooled rice.

Prepare the Salmon Skin
If using raw salmon skin, pan-fry it until crispy or use pre-cooked salmon skin.

Assemble the Roll
Place a bamboo sushi mat on a flat surface. Lay a nori sheet shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Place salmon skin, cucumber, and avocado in a line across the rice. Roll the sushi tightly from the bottom using the mat to help you, pressing gently.

Slice the Roll
Once rolled, use a sharp knife to slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to keep it clean.

Serve
Drizzle eel sauce over the top and sprinkle with sesame seeds. Serve with additional eel sauce on the side.
