    Prepare the Mochi Dough

    In a microwave-safe bowl, combine sweet rice flour, sugar, and water. Mix until smooth. Cover the bowl with plastic wrap.

    Cooking the Mochi

    Microwave the mixture for 1 minute. Stir, then microwave for another minute. Stir again, and then microwave for an additional 30 seconds until the mixture becomes thick and sticky.

    Cooling the Mochi

    Dust a clean surface with cornstarch. Pour the mochi dough onto the surface and allow it to cool slightly. Dust the top with cornstarch to prevent sticking.

    Form the Mochi Balls

    Once cool enough to handle, divide the mochi dough into small pieces (about 2 inches in diameter). Flatten each piece and place a small scoop of ice cream in the center. Carefully wrap the mochi around the ice cream and pinch to seal.

    Freezing

    Place each mochi ice cream ball on a baking sheet lined with parchment paper. Freeze for at least 2 hours or until solid.
