Preparation and Cooking
Prepare the Filling
In a bowl, mix the shrimp, crab meat, and masago together until well combined.
Assemble the Rolls
Lay a sheet of soy paper on a clean surface. Place a portion of the shrimp and crab filling in the center of the paper. Roll it tightly, folding in the sides as you go.
Prepare Tempura Batter
In a separate bowl, mix the tempura batter mix with cold water until smooth.
Heat Oil
In a deep frying pan or pot, heat the vegetable oil to 180°C (350°F).
Fry the Rolls
Dip each rolled soy paper in the tempura batter, ensuring it is well coated. Carefully place the rolls in the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Prepare Topping
In a small bowl, mix the crab meat with mayonnaise and Sriracha sauce to create a spicy topping.
Serve
Slice the fried rolls into bite-sized pieces and top with the spicy crab and mayo mixture.
