Prepare the Filling
In a large bowl, combine the ground pork, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Fill the Dumplings
Take a gyoza wrapper and place about 1 tablespoon of the pork filling in the center. Moisten the edges of the wrapper with a little water, fold it in half, and pinch the edges to seal. You can create pleats for a decorative touch if desired. Repeat with the remaining wrappers and filling.

Cook the Gyoza
Heat vegetable oil in a large skillet over medium heat. Place the gyoza in the skillet and cook for about 2-3 minutes until the bottoms are golden brown. Carefully pour in about 1/4 cup of water and cover the skillet with a lid. Allow the gyoza to steam for about 5-6 minutes until the water has evaporated.

Serve
Remove the lid and let the gyoza cook for an additional minute to crisp up the bottoms. Serve warm with soy sauce for dipping.
