Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook in a rice cooker or on the stovetop according to package instructions. Once cooked, let it cool to room temperature and season with rice vinegar, sugar, and salt.

Prepare the Fillings

While the rice is cooling, prepare the fillings. Chop the crab meat, shrimp, and scallions. Slice the avocado, cucumber, salmon, and tuna.

Assemble the Rolls

Lay a sheet of nori on a bamboo sushi mat, shiny side down. Moisten your hands and spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top. Layer the crab, shrimp, salmon, tuna, avocado, cucumber, and scallions across the center of the rice.

Roll the Sushi

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Roll until the border of nori is reached, then wet the edge with water to seal the roll.

Slice the Rolls

Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts to ensure clean edges.

Add Masago and Hot Sauce

Sprinkle masago on top of the sliced rolls and drizzle with Nakato hot sauce to taste before serving.
