California Roll Preparation

Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer the rice to a bowl and mix in rice vinegar, sugar, and salt while the rice is still warm. Let it cool to room temperature.

Prepare Fillings
While the rice is cooling, shred the imitation crab meat and mix it with mayonnaise in a bowl. Cut the avocado in half, remove the pit, and slice it thinly.

Assemble the Roll
Place a bamboo sushi mat on a flat surface. Lay a sheet of nori, shiny side down, on the mat. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Press the rice down gently.

Add Fillings
Place a line of the crab mixture and sliced avocado along the bottom edge of the rice-covered nori. Sprinkle masago over the top.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to keep it tight. Seal the edge of the nori with a little water.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce and wasabi on the side.
