Assemble the Enchiladas
Preheat your oven to 375°F (190°C). Take a corn tortilla, place a generous amount of the seafood filling in the center, then roll it tightly and place it seam-side down in a greased baking dish. Repeat with all tortillas.

Add Sauce and Cheese
Pour enchilada sauce over the rolled tortillas, ensuring they are well covered. Sprinkle shredded Monterey Jack cheese on top.

Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Remove from the oven, let cool for a few minutes, then garnish with additional cilantro and serve with sour cream on the side.
