    Prepare the Filling

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened. Add fresh spinach and cook until wilted. Remove from heat and let cool slightly.

    Combine Ingredients

    In a mixing bowl, combine the cooked spinach mixture, crumbled feta cheese, eggs, dill, salt, and black pepper. Mix well until fully combined.

    Prepare Phyllo Dough

    Preheat your oven to 375°F (190°C). Lay out a sheet of phyllo dough on a clean surface and brush lightly with olive oil. Layer two more sheets on top, brushing each with olive oil.

    Assemble the Spanakopita

    Place a generous amount of the spinach filling along one edge of the phyllo dough. Fold the edges over to enclose the filling and roll tightly into a log shape. Place seam side down on a baking sheet. Repeat with remaining filling and dough.

    Bake

    Brush the tops of the rolled spanakopita with olive oil. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.

    Allow to cool for a few minutes before slicing into pieces. Serve warm and enjoy!
