Falafel Preparation

    Soak Chickpeas

    In a large bowl, soak the dried chickpeas in water for at least 8 hours or overnight. Drain and rinse before using.

    Prepare the Mixture

    In a food processor, combine the soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking soda, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.

    Form the Falafel Balls

    Transfer the mixture to a bowl and sprinkle in the flour. Mix until it holds together. With wet hands, form small balls or patties (about 1.5 inches in diameter).

    Heat the Oil

    In a large pot or deep frying pan, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

    Fry the Falafel

    Carefully drop the falafel balls into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes on each side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Serve hot with tahini sauce, pita bread, and fresh vegetables.
