    Cook the Pasta

    Boil a large pot of salted water. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Meat Sauce

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened. Add ground beef or lamb and cook until browned. Stir in crushed tomatoes, tomato paste, cinnamon stick, bay leaf, salt, and pepper. Simmer for 20-30 minutes until the sauce thickens.

    Make the Béchamel Sauce

    In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add milk, whisking constantly until the mixture thickens. Remove from heat and stir in beaten eggs, crumbled feta, and half of the Parmesan cheese.

    Assemble the Pastitsio

    Preheat the oven to 180°C (350°F). In a greased baking dish, layer half of the cooked penne pasta, followed by the meat sauce, then the remaining pasta. Pour the béchamel sauce over the top and sprinkle with the rest of the Parmesan cheese.

    Bake

    Bake in the preheated oven for 30-40 minutes, until the top is golden and bubbling. Let it cool slightly before serving.
